After years of debating, petitioning, rulemaking, and outright stalling, this week the federal government is finally implementing new requirements for testing E. coli in ground beef.Commentary:
Why is this cause for celebration?
Because while the U.S. Department of Agriculture's Food Safety and Inspection Service has for years required testing of the deadly 0157:H7 strain of E. coli, numerous other strains have also become a significant safety threat.
This is very good news. Now the government is going to require that meat packers inspect ground beef for several strains of E. coli, not just one. It’s bad enough that we have to contend with all the drama about pink slime. Now, at least, the E. coli threat is going to be addressed more firmly.
To you low carbers, sorry about the bun in the picture. If you’re like me, though, you’re accustomed to ordering a hamburger and ignoring the bun!
